refactor: reorganizar docs y pocs bajo INFO/

- docs/ → INFO/DOCS/CONTEXT/ (documentación técnica en markdown)
- FLUJOS/DOCS/ + FLUJOS_DATOS/DOCS/ → INFO/DOCS/ (txts de arquitectura)
- POCS/ → INFO/POCS/ (pruebas de concepto)
